Veal Meatballs
I had never cooked with veal until last week. On my way home from work, I stopped by Publix to find something for dinner. There, I found some excellent-quality ground veal at a reasonable price. I decided to make meatballs with it. Veal and almonds pair nicely together, making this keto-friendly.

ingredients
1 pound ground veal
1 cup almond flour
1 large egg
2 cloves garlic -minced
fresh lemon-thyme
fresh rosemary
1 teaspoon bacon fat.
pinch of black pepper
pinch of salt
I mixed these and used a cookie scoop to get 15 balls, all the same size. I pan-fried them on the stovetop in a bit of coconut oil; in retrospect, I think they would’ve come out prettier if I had baked them in the oven, but my oven had herbed baguettes in it at the time. If I had the room, I would’ve baked them at 350F for 15-20 minutes.
I served them with pasta sauce, steamed broccoli, garlic & herb baguette, and whipped lemon ricotta.
