Two-Meat Meatloaf, Roasted Potatoes, Roasted Broccoli

For Midweek Madness, I am making meatloaf with 50% ground veal, 50% ground beef, roasted red potatoes, and roasted broccoli. I made a quick BBQ sauce to top the meatloaf; both recipes are FODMAP friendly.

This yields two 9 x 5-inch loaves. Cook time is 45 minutes, and the total time is 1 hour.

This is my quick Smokey & Sweet BBQ recipe.

  • 1/2 cup ketchup

  • 1/4 cup dark brown sugar

  • 1/4 cup molasses

  • 1/2 teaspoon Worcestershire sauce

  • 1/4 teaspoon liquid smoke

In a small bowl, whisk together the ingredients, then set aside.

Here is my recipe for the meatloaf.

  • 1 pound ground veal

  • 1 pound of ground beef

  • 2 eggs

  • 1 cup panko

  • 1 teaspoon kosher salt

  • 1/2 teaspoon ground black pepper

  • 1/4 cup of ketchup

  • 1 tablespoon Worcestershire sauce

  • 1/4 teaspoon mustard powder

  • 1/4 teaspoon paprika

Preheat the oven to 350F

In a medium bowl, combine all the dry ingredients, mix together, then add the wet ingredients and meats. Mix until well combined(this can also be done in a Kitchen Aid with the paddle attachment). Divide the mixture between two 9x5" loaf pans. Brush with BBQ sauce and cook for 45-60 minutes until a thermometer inserted into the middle of the loaf reads 165F.

For the roasted potatoes, I tossed them in olive oil, turmeric, paprika, salt, pepper, cumin, and coriander. Then roast them at 400F for 45 minutes; they can also be roasted at 350F for an hour; if cooking everything in one oven, place them on the lower rack next to the broccoli. I tossed the broccoli in olive oil, salt, and pepper and baked it on a different sheet pan at 350F for 40 minutes. Sides and spices are optional and should be adjusted to personal preference.
