Simple Beef Stew
Today, I made a beef stew. I did this in my Dutch oven, which is excellent for a one-pot meal. This recipe can also be made in a crockpot and left to cook all day. The total time for the Dutch oven is 25 minutes of active time and 2 hours of idle time.

Ingredients.
1/2 yellow onion
4 mini bell peppers
3 cloves of garlic
4 carrots
3 red potatoes
1.5 lbs stew beef
32 oz stock or broth
1 tsp celery salt
1 tsp kosher salt
1 tsp black pepper
1 bay leaf.
1 tbsp oil
First, place the Dutch oven over medium heat to preheat, and preheat the oven to 350F.
Start by peeling the potatoes and carrots and chopping the rest of the vegetables. Once the pot is preheated, add a little oil to the onions, peppers, and garlic and cook for five minutes. Next, add the stew beef slices and stir until all the edges are browned, about 10-15 minutes. Then, add the carrots, potatoes, broth, and bay leaf. Cover and place in the oven for at least two hours. It can be served with bread and butter or over rice, making about 6-8.
Note: If you like celery and have it on hand, feel free to use it and leave out the celery salt. I didn’t have any on hand when I made this.
